Why do we love this whisky?

Produced by Masahiro Shuzo Distillery, the Kujira whiskies are the result of the 100% Indica rice unique to the area, in combination with the hot and humid year-round climate. This heady heat accelerates the maturation of whisky several times faster than it would in a temperate climate like, say, Scotland, thus producing a decidedly fuller, rounder bodied dram that highlights the unique aroma of the Indica rice. Smooth, well-rounded, with a distinct balance of sweetness and spice, the use of black Koji yeast, a technique rooted in Okinawan distilling, adds depth and umami richness, further setting this whisky apart.

Black Koji yeast is a traditional Okinawan fermentation culture that's been used for centuries in local spirit production, particularly awamori. Unlike standard whisky yeasts, black Koji adds remarkable depth and umami richness to the spirit, creating savoury undertones that complement the sweet caramel and vanilla notes. This fermentation technique is deeply rooted in Okinawan distilling heritage and gives Kujira whisky its distinctive character that sets it apart from mainland Japanese whiskies.

Given its smooth, well-rounded profile and medium body, this whisky is versatile enough to enjoy neat, on the rocks, or with a splash of water to open up the rice aromatics. The tropical maturation creates a naturally approachable spirit that doesn't require extensive breathing time.
