Why do we love this whisky?

Release No. 3 is an unapologetic expression of centuries-old tradition. Founded in 1778 in Kirkwall by the enigmatic whisky priest Magnus Eunson, Highland Park remains anchored to the same rugged land and spirit that first shaped its character. The distillery is renowned not only for its rich Viking heritage, but also for its dedication to authenticity.. From the heather-rich, locally harvested peat, to the rare sherry seasoned American and European oak that matures each drop. Bottled at full cask strength (64.1%), this dram captures Orkney’s wild harmony of smoke, sea air, and honey-laden depth. A true testament to the island’s enduring soul.

Frequently Asked Questions

Bottled at a robust 64.1% ABV, this cask strength release delivers the whisky exactly as it emerges from the barrel without dilution. This higher proof intensifies the characteristic Highland Park flavours of honey and smoke, while allowing you to control the strength by adding water to your personal preference. The undiluted spirit showcases the full impact of their heather-rich Orkney peat and sherry-seasoned oak maturation.

Highland Park stands apart as one of the few distilleries that still uses traditional floor malting with locally harvested heather peat from Orkney's Hobbister Moor. This heather peat burns cooler and imparts a distinctive floral smokiness quite different from mainland Scottish peat. Combined with their Viking heritage and island location, where sea air influences maturation, Highland Park creates a flavour profile that's both smoky and honeyed - a rare balance in Scotch whisky.

The combination of American and European oak sherry-seasoned casks adds layers of complexity beyond the core honey and smoke profile. European oak typically contributes rich, dried fruit notes and spice, while American oak provides vanilla and coconut undertones. These sherry influences complement Highland Park's natural honeyed character, creating depth and balancing the peat smoke with sweet, nutty flavours that develop over the whisky's maturation period.

Start by nosing the whisky neat to appreciate its full aromatic intensity, then take a small sip to gauge the heat level. Most whisky enthusiasts add a few drops of water gradually, which opens up new flavours and reduces the alcohol burn. The high proof means a little goes a long way - the whisky will continue evolving in your glass as it breathes and as you experiment with different dilution levels.

Limited releases like this represent Highland Park's opportunity to showcase exceptional cask selections that don't fit their regular production cycle. The 90-point rating reflects the quality of the specific barrels chosen for this batch, likely representing peak maturation or particularly characterful casks. Once this release sells out, the exact flavour profile won't be replicated, making it a unique snapshot of Highland Park's craftsmanship at this moment in time.
