These signature flavours emerge from the interaction between the high-corn bourbon mash bill and the dual oak aging process. Caramel flavours intensify through the Maillard reaction during barrel aging, while the cherry characteristics come from the toasted oak's ability to extract fruit-forward esters and enhance the bourbon's natural sweetness.
