Why do we love this rum?

The Fijian sugarcane is hand-cut using traditional techniques, then turned to molasses at the local mill in Lautoka town. An ode to the beauty and traditions of the Fiji Islands, the golden liquid goes through an extensive double-ageing process: first maturing in Fiji in ex-bourbon casks for three years, then travelling by sea (what they like to call “dynamic ageing”) before arriving in the southwest of France for a final finishing period of twelve months in French oak. This unique maturation process produces dark treacly molasses highlights, with warm notes of exotic fruits and raisins, wrapped up in a long, rich, round finish.
